RECIPE FROM MY LATEST BOOK, "Nectar in the Raw"

Pasta with curried almond creme Alfredo


PASTA:

Take summer squash or zucchini and peel skin.

Ideally use a spiralizer or if you don't have one, use a large vegetable peeler and make long strands to create the appearance of noodles. I prefer angel hair so in this case the spiralizer is needed and quickest.

Curried Almond Creme Alfredo Sauce:

One Cup organic cashews, soaked is best for a hour or so

6 fresh dates

1.5 teaspoons organic curry powder

dash of celtic sea salt

1 large garlic clove

1/4 cup filtered water

Blend all together in food processor until a nice thick, creamy texture. This can be chilled and served on crackers or as a veggie dip. Its awesome!!


Add on top of NOODLES and garnish with cashew parm....for a cheese like flavor.

This is so delish and so quick and easy....it will make you feel like a RAW foods RAWK STAR!!!
